- 6 boneless skinless chicken thighs
- 2-4 tbsp harissa paste adjust to spice preference
- 2 tbsp tomato paste
- ¼ cup honey
- Juice of 1 lemon
- ⅓ cup extra virgin olive oil
- 1 tsp Urfa Biber or Aleppo pepper/red chili flakes
- 1 tsp ground coriander or cumin
- ½ tsp smoked paprika or sweet paprika
- 5 garlic cloves minced
- 1 tsp kosher salt
- ½ tsp black pepper
Make the marinade: In a large bowl, whisk together harissa, tomato paste, honey, lemon juice, olive oil, and spices.
Marinate the chicken: Coat the chicken thoroughly in the mixture and let it sit (preferably 2 hours or overnight for best flavor).
Preheat & bake: Heat oven to 400°F (200°C). Transfer chicken and marinade to a 9×13 baking pan and bake for 35-40 minutes, until caramelized and cooked through.
