Ingredients
  

  • 6 boneless skinless chicken thighs
  • 2-4 tbsp harissa paste adjust to spice preference
  • 2 tbsp tomato paste
  • ¼ cup honey
  • Juice of 1 lemon
  • cup extra virgin olive oil
  • 1 tsp Urfa Biber or Aleppo pepper/red chili flakes
  • 1 tsp ground coriander or cumin
  • ½ tsp smoked paprika or sweet paprika
  • 5 garlic cloves minced
  • 1 tsp kosher salt
  • ½ tsp black pepper

Instructions
 

  • Make the marinade: In a large bowl, whisk together harissa, tomato paste, honey, lemon juice, olive oil, and spices.
  • Marinate the chicken: Coat the chicken thoroughly in the mixture and let it sit (preferably 2 hours or overnight for best flavor).
  • Preheat & bake: Heat oven to 400°F (200°C). Transfer chicken and marinade to a 9×13 baking pan and bake for 35-40 minutes, until caramelized and cooked through.
  • Serve: Drizzle with pan juices and serve with couscous, rice, or a fresh salad.
