Ingredients
  

  • 2 6-ounce cans of skinless and boneless salmon
  • 2 large eggs
  • 2 tablespoons mayonnaise
  • 2 teaspoons Dijon mustard
  • 2 teaspoons minced fresh garlic
  • ½ teaspoon Diamond Crystal kosher salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ cup chopped parsley
  • ¼ cup olive oil for frying

Instructions
 

  • In a bowl, combine salmon, eggs, mayonnaise, Dijon mustard, garlic, salt, pepper, thyme, and parsley.
  • Mix gently until just combined. Avoid over-mixing.
  • Shape the mixture into evenly sized patties.
  • Heat olive oil in a pan over medium-high heat.
  • Fry each patty for 3-4 minutes per side, until golden brown and crispy.
  • Remove from heat and drain on paper towels before serving.
